Live Blog: Ravioli Lasagna
Dinner was consumed.  Turned out good, though different than the ideal in my mind before setting out on this path.  There were lessons learned.  Most of all, I’m just happy to have a full belly, an open bottle of red wine and my woman by my side. Wine is breathing and lasagna is finishing up in the oven.  Would’ve gladly had people over to share (that means you crabby-cakes) but I thought the city would be in ruins all around us because of the carpocalypse.  Another pasta night and there will be guests.  So freaking hungry.

Ravioli is shaped and needs a quick blanch before assembly.  Dinner will be served promptly at 10:30pm (or so).  Made so much ravioli filling I think I’ll do a calzone for dinner tomorrow night.

Pasta has been rolled out. I think it was the semolina, but this was the easiest time I’ve had with fresh pasta. No tears and not too much screaming. The pasta rests, I rest and then the ravioli created and the lasagna is assembled.

Sauce is ready.  Ravioli filling is ready.  Young cat attacked the cloth under which the pasta ball was resting.  If he had damaged the nascent pasta, we would’ve seen how thinly he could be rolled through the machine. Time to crank up the machinery and squeeze this pasta.

Sauce rests, awaiting the impossibly small meatballs I rolled.  They need browning, then swim with the tomatoes.  Chard is wilted and ready to be mixed with the ricotta and asiago for the ravioli filling.  Once the sauce is together, I roll the pasta.

Sauce continues to simmer, the smell of caramelized tomatoes filling the apartment. Pasta dough was mixed (50% AP flour, 50% semolina) and kneaded for 10 minutes (my exercise for the day).  Now it rests. Next the ravioli filling (ricotta and chard).

Styx on the headphones, chopped the Mirepoix, sweated it out in the pot and added the strained tomatoes.  That simmers for an hour, giving me time to make the pasta and filling.  Then meatballs. Domo arigato, Mr. Roboto.
